I think this is an exquisite place. Great fine dining at the bottom of your hotel. The decor is nice. It gives off a fancy feel. The staff is amazing. Nadeem, and Bradley, the organization has real gems. Very hard to find good people these days. The food was pricey, but this is supposed to be high end dining. Dinner I got a steak, I asked for it medium and it came out cut and well done. I should have sent it back but I always have fears of tampering. The side dish I am not sure what it was, but it wasn’t something I enjoyed or remembered. The roasted baby squash was more decorative than anything. They required a little work to enjoy. My lady got the snapper, her risotto was amazing actually. I enjoyed her plate more than mine. Breakfast My lady for the shrimp and grits. The grits were decent. I got this egg and cheese omelet, it appeared to be prepared like a French style with toast. My gripe was the portion of my omelet, and after I got the bill I was slightly disappointed. Overall, it’s a great date night place, just remember outdoor seating is somewhat shared with the pool area, so in the mornings, you will hear the children enjoying themselves.

My family and I had dinner here Saturday and loved it. We ordered the Snapper, NY Strip, and Airline Chicken which everyone enjoyed. Our server Nadeen was polite, attentive, and gave great suggestions. The restaurant’s vibe was elegant and upscale. Only drawback was some noise from the kitchen, but overall we had a great experience and will definitely be back.

We ended up at The Olivet entirely on accident, however it was the best mistake we could have made. The food was exceptional, the service was perfect, and the space is gorgeous. Our server Karol was so pleasant and gave us amazing service. Although we didn’t stay at the hotel- we’re definitely going to book it next year for our yearly trip to the mountains.

From the moment we walked into The Olivet, we were greeted with warmth and a cozy atmosphere. The menu had a great variety, but Karol, our server, really made the experience exceptional. He was knowledgeable about the dishes, offered great recommendations, and was incredibly attentive without being intrusive. The food itself was delicious, each dish was clearly made with fresh ingredients and a lot of care. I had the rainbow trout, and it was cooked to perfection. The entire evening was a delight, thanks to the wonderful food and Karol's outstanding service. We can't wait to go back!

We dined at The Olivet on Sunday evening; we’re still talking about it. Our servers, Miles and Jessica M., couldn’t have been any nicer and they made our dining experience perfect. The yummy olive bread & olives brought to our table were a nice touch. My husband ordered a white wine, which came in the coolest wine glass; I need to find those to purchase. I had the Charlie’s Angel cocktail. It was one of the best cocktails I have ever had. I wasn’t very hungry so I ordered the Beetroot Burrata Salad and my husband ordered the Rainbow Trout. The presentation for both meals was stunning, and the taste of the food was delicious. For dessert my husband had the apple bread pudding, which was another hit. The smells coming from the kitchen are what drew us in. The chef definitely knows how to put out a delicious, culinary meal. The food, the service and the ambiance are memorable. We look forward to returning!!

I recently dined at The Oliver and had the pleasure of being served by Karol. From the moment we were seated, he made us feel welcomed and attended to our needs with a warm smile. Karol was knowledgeable about the menu, providing recommendations that perfectly matched our tastes. He checked in on us at just the right moments, ensuring our drinks were refilled and that we had everything we needed without being intrusive. The food came out promptly, and Karol made sure to inform us of any specials or ingredients, which was a nice touch. It’s clear he takes pride in his work and genuinely cares about the dining experience. Overall, Karol made our evening enjoyable and memorable. I would highly recommend requesting him on your next visit.

The Olivet at The Swiftwater Hotel was one of the best Pocono fine dining experiences we've had. Dinner was so great, we tried breakfast the next morning too. Far from disappointed. The ambiance strikes the perfect balance between elegant and cozy... and the decor is warm and inviting. It's just a place you want to relax in. Dinner began with their signature Dante's Inferno Margarita. Bold and spicy, the black salt rim and fresh jalapeño slice gave it a distinctive kick. It actually paired well with my meal. I'd get this again. For appetizers we began with the Beetroot Burrata. Great plating and wonderful flavors. The Braised Short Rib, served bone-out, was remarkably tender and plated over celery root puree with roasted celery root, kale, and pearl onions in a grape brandy demi-glace. Refined, comforting, amazing. I loved the seared diver scallops. Perfectly caramelized on the outside, buttery texture inside, served with fresh asparagus spears and a beautiful red beet purée. The pasta dish, Sunday Gravy, was perfectly cooked pasta and meat in a rich tomato sauce, garnished with fresh herbs and a generous dusting of parmesan. It tasted like someone's Italian grandmother had been cooking it all day. For dessert, we were treated to an impressive tableside flambé presentation of bananas foster by our server Brookel. The warm apple bread pudding with what tasted like toffee ice cream was equally impressive, with a perfect balance of sweet and salty flavors. Breakfast the next morning maintained the high standards, with brûléed French toast that was crisp outside and custardy inside, topped with fresh berries. This was worth the trip alone. The shrimp and grits were fantastic as well. Great portion sizes on everything. Service throughout was exceptional. Special thanks to Alex and Brookel who made our experience truly memorable with their knowledge and warm hospitality. Whether you're staying at The Swiftwater or just in the area, The Olivet is absolutely worth the visit for breakfast or dinner.
